I have a standard Unimat collet chuck (ER16 with M12 internal thread) & a bunch of generic ER16 collets... I'm glad it came with the lathe as the prices are silly
I suppose it's theoretically possible to get an ER11 chuck to fit, but I can't find one with the right bore/thread fitting - look at #322635571083 on eBay (5mm internal bore) for example. You'd have to bore it out & tap it, but I don't know if there's enough metal there start with. Cheap enough to have a go though

Ok the long chuck has to go inside the tailstock, the other one can be screwed onto the spindle and on the tailstock.

How did you sort the motor pulley? Despite having a variable speed control, I'd still like to replace the singe speed pulley I made to fit my scooter motor with a three speed pulley of the same sizes as the original - and it should be a lot easier when I get the Boxford lathe going ... just thought I'd mention it as it's theoretically only twice as time consuming to make two ...

I always intended to get a steady for the Unimat, they were always more than I would have liked to pay, then availbility seemed to dry up for a while, at lease for the early models. This one came up recently so I pulled my finger out & clicked Buy It now. I suppose I could strip it back to bare metal & repaint, but it's not quite far gone enough to warrant that - a quick clean up & layer of oil will have to do
